
Montelobos Espadín Mezcal
Montelobos Espadin Mezcal is a joven mezcal artesanal of organically cultivated espadín, made at Palenque Montelobos (NOM-0156X) in Santiago Matatlán, Oaxaca, by maestros mezcaleros Iván Saldaña and Guadalupe García. It is bottled at 43.2% ABV.
The agave is roasted in a conical underground stone oven fueled with encino and pine, then milled by a mule-drawn tahona. Fermentation is wild, in open pine vats without added yeast or nutrients, and the copper stills are heated by direct wood fire. The nose shows damp earth, cut grass, honey, citrus, asparagus and smoke; the palate brings cooked and green agave, nuts, herbs and smoke.
