Rabbit Hole Dareringer Sherry Cask Bourbon
Rabbit Hole Dareringer Sherry Cask Bourbon is a straight bourbon from Rabbit Hole Distillery in Louisville, finished in hand-made Pedro Ximénez sherry casks from the Casknolia cooperage in Spain. It is bottled at 93 proof (46.5% ABV).
The wife of founder Kaveh Zamanian inspired the expression, which is made in small batches of no more than fifteen barrels and bottled without chill filtration. Sherry, cherry and herbs open the nose with dried flowers, licorice and candied lemon peel. Blueberry, grape and boysenberry fill the palate, threaded with licorice, coriander, mint and oak spice, and the finish turns to dark fruit, menthol, licorice, roasted nuts and oak.
