
Bozal Iberico Sacrificio Mezcal
Bozal Iberico Sacrificio Mezcal is a pechuga-style ensamble from Río de Ejutla, Oaxaca, made with espadín, mexicano and tobasiche agaves and bottled at 47% ABV. It belongs to Bozal's Sacrificio series, small batches made with local protein, fruit and grains.
The agave is baked in earthen-oven pits and distilled in a copper pot still. Before the second and final distillation, cooked and seasoned Ibérico pork is added along with local herbs, spices and seasonal fruit. Lime, grapefruit and banana lift the nose, and the palate is viscous and savory, with a light floral note of hibiscus.
