DAOU Soul of a Lion Cabernet Sauvignon is a Cabernet Sauvignon from DAOU Vineyards, grown on DAOU Mountain in the Adelaida District of Paso Robles. Founders Georges and Daniel Daou named it as a tribute to their father, Joseph, and the winery calls it its crown jewel. The 2021 vintage blended 82% Cabernet Sauvignon, 12% Cabernet Franc and 6% Petit Verdot and aged 22 months in new French oak.

Of the 2021 vintage, DAOU notes aromas of black cherry, blackberry, blueberry jam and black currant with baking spices, sage and graphite, followed by chocolate-covered blueberry, tobacco, mocha, vanilla and toasted oak, with round tannins and a commanding finish.
