Elijah Craig Barrel Proof Bourbon is drawn uncut, straight from the barrel, at Heaven Hill Distillery in Bardstown, Kentucky. It is bottled without chill filtering at barrel proof, which varies from batch to batch.

Every release carries a code built from its release letter, month and year, so C925, for example, marks the third release of September 2025. Caramel and toasted oak meet apple and orange on the nose. The palate is rich with vanilla, caramel and butterscotch, sharpened by black pepper and cinnamon, and the layered finish fades slowly and lingers.
