Lion Tamer Cabernet Sauvignon is a Napa Valley Cabernet Sauvignon from Hess Persson Estates, made at the winery's Lions Head Cellar. The winery blends valley floor Cabernet Sauvignon with a share of its mountain-grown Malbec, which it says softens the tannins. The current 2023 release is 85% Cabernet Sauvignon, 8% Petite Sirah and 7% Malbec, aged 20 months in French and American oak, 40% of it new.

For the 2023 vintage, the winemakers describe a deep garnet color and aromas of brown sugar, cardamom, boysenberry and toasted marshmallow. The palate has a soft entry and rich flavors accented by cinnamon and black cherry, leading to a long, lingering finish.
