
Montelobos Ensamble Mezcal
Montelobos Ensamble Mezcal is a joven ensamble of papalote, espadín and tobalá agaves, made at Palenque del Tentzo in San Nicolás Huajuapan, Puebla, by maestro mezcalero Aarón Alva under Iván Saldaña.
The agave is roasted in a conical underground brick oven fired with encino and tepeguaje wood, mechanically shredded and wild-fermented in open pine vats with no added yeast or nutrients. Distillation takes place in copper stills over direct wood fire. Cooked agave, smoke and citrus lead the nose; capers, nutmeg and pink pepper mark the palate, and the finish carries leather, warm spice and faint candied strawberry.
