
Montelobos Tobalá Mezcal
Montelobos Tobala Mezcal is a joven mezcal of sustainably cultivated tobalá (Agave potatorum), made at Palenque del Tentzo in San Nicolás Huajuapan, Puebla, by maestro mezcalero Aarón Alva under Iván Saldaña.
The agave roasts in a conical underground brick oven fueled with encino and tepeguaje wood, ferments wild in open-air pine vats without added yeast or nutrients, and is distilled in small batches in copper stills over direct wood fire. Lemon, licorice, green pepper, pear, citrus and spice form a lively nose. Basil, roasted fig, macadamia and truffle shape the palate, and the finish turns to dried fruit, apple, leather and earthy smoke.
