Penelope Architect French Oak Bourbon is a straight bourbon from Penelope, aged for a minimum of four years and then finished with French oak staves made with Tonnellerie Radoux of France.

The staves carry Radoux's Complex profile, rated medium in tannin, and are chosen through the cooperage's OakScan process for consistent flavor profiling. The mash bill is 75% corn, 21% rye and 4% malted barley. Candied cream, floral notes and crème brûlée open the nose. The palate is creamy and sweet with herbal and floral accents, and the finish is long, with rich vanilla and a lingering heat.

At Sun of a Gun Cigars & Spirits in Yuma, Arizona, we pour it by the glass as a single or a double, with bottles to go (750 mL).
