Penelope Toasted Bourbon

Penelope Toasted Bourbon is a straight bourbon from Penelope, finished in a new hand-toasted barrel and bottled at 100 proof (50% ABV). Its mash bill is 75% corn, 21% rye and 4% malted barley.

The finishing barrel defines this expression. Each batch is finished in a barrel with a different toast, so the profile shifts from one release to the next, and every batch is bottled without chill filtering. The same recipe, read through a new layer of toasted oak each time, gives each release a character of its own.
